Le tradizioni popolari non sono nate per caso, ma come ogni cosa che si tramanda, si ricollegano a tempi remoti, e non si cambiano, se non per grandi eventi. Per disgrazia o per fortuna, in Puglia di grandi eventi non ne capitano poi così tanti, quindi, soprattutto nei paesini arroccati sui monti del Gargano o dispersi nelle vaste pianure, alcune tradizioni sono rimaste intatte.
Il Natale è il periodo dell’anno in cui si concentrano le maggiori festività, è quindi in questi giorni che la gente si prepara a vivere in pieno le tradizioni che gli sono state tramandate e fra queste, occupano un posto di rilievo quelle culinarie.
Esiste nella memoria di ognuno un “calendario della cucina”, uno scadenzario, quasi un’agenda, sulla quale sono idealmente segnati piatti tipici a seconda della ricorrenza, pietanze che, nella tradizione gastronomica delle comunità civiche di cui si tratta, costituisce il “distinguo”, l’identità, il codice genetico di ognuna di esse. Così, pensando al Natale vengono immediatamente in mente “lu fucazieddu”, “li carteddate” e le “sannacchiutele”.
Ma non solo. La tradizione natalizia pugliese è anche legata ai presepi. La diffusione a livello popolare del presepe si realizza pienamente nel ‘800 quando ogni famiglia in occasione del Natale costruisce un presepe in casa riproducendo la Natività secondo i canoni tradizionali con materiali – statuine in gesso o terracotta, carta pesta e altro – forniti da un fiorente artigianato. In questo secolo, si caratterizza l’arte presepiale della Puglia, specialmente a Lecce, per l’uso innovativo della cartapesta, policroma o trattata a fuoco, drappeggiata su uno scheletro di fil di ferro e stoppa.
Ad Oria (Bridisi), il presepe tutti gli anni, il 25 dicembre alle 18, anima le strade dell’antica cittadina medievale e risale al periodo di San Francesco.
Negli ultimi anni, la Puglia non è stata risparmiata dalla “commercializzazione” del Natale. Da essere solo la patria del divertimento estivo, è diventata un’insospettabile meta, lunga una regione, per passare le festività natalizie con un ricco calendario di eventi che promettono di accontentare non solo i fedeli devoti alle celebrazioni liturgiche del Natale, ma anche le migliaia di persone che danno a questa festività un carattere più profano.
Ci sarà quindi spazio per i cultori dei coloratissimi mercatini, per i golosi alla ricerca di sagre e leccornie da gustare, per gli estimatori dei presepi viventi.
In una terra di marinai e contadini, ma anche di commercianti, l’aspetto economico non può essere trascurato. L’auspicio è che non cancelli del tutto il patrimonio di tradizioni che col trascorrere dei secoli abbiamo accumulato.
